Winter Van Treats: Chocolate Florentines

Ok, so I am in severe wishful thinking mode, we are now in Tier 2 but we are desperate to see grandparents over Christmas so we are staying put at home; however, the Christmas treats I have made would be perfect for a winter van trip. Whats not to love about a delicious sweet treat and a hot chocolate after a blustery winter walk.


Deliciously nutty, orangey and chocolatey Florentines


You will need: 50g salted butter

50g light muscovado sugar

50g golden syrup

50g plain flour

50g glace cherries, chopped

50g pistachios, chopped

75g flaked almonds

2 oranges, zested

175g dark chocolate


  1. Heat oven to 160c and line 2 baking sheets with baking paper. Melt the sugar, golden syrup and butter in a saucepan, over a low heat. Remove from the heat and whisk in the flour and then cherries, flaked almonds, orange zest and pistachios.

  2. Scoop 1 tablespoon of mixture out on the sheets, leaving a good space between blobs as they will spread. Bake for 10 minutes until golden. Remove from oven and cool on a cooling rack.

  3. Melt the chocolate in a bowl over simmering water. Put the chocolate onto the biscuits however you like, drizzle over the top, spread over the base and fork a pattern into them etc. We drizzle as the children make these.


Now the important thing here is to melt more chocolate than the recipe above, so get 2 packs of chocolate and melt it all, then you can use the remainder for your chocolate dipping spoons. For the dipping spoons, I buy wooden spoons from the supermarket as these can be used again and limits plastic waste.


1 Cover the end of the spoon with chocolate entirely then scoop up some in the dip before resting on a plate with baking paper on the top.

2. Decorate your spoon as you wish, marshmallows, hundreds and thousands, white chocolate chips, nuts, caramel nibs, cocoa nibs, coffee beans, anything you like really.

3. Make some delicious hot chocolate, then stir in your dipping spoon for an extra chocolatey treat.
